![]() I love adding in pickle juice - usually some kind of bread and butter pickle since that is what I have on hand the most. Usually a very simple concoction containing elbow macaroni, a little celery, most always pickles and pimentos here in the south, and sometimes onion, it's dressed usually with a very classic mayonnaise dressing. The original recipe calls for you to melt the cheese with the white sauce but I have never tried that as I am not a big fan of super creamy macaroni and cheese. ![]() You can also make it extra creamy by adding an additional cup of white sauce. Some tweaks I have tried at different times that turned out yummy: This recipe has been adapted from a Betty Crocker cookbook from the 1950’s. ![]() Return to heat and stir constantly until boiling. Cook over low heat, stirring until mixture is smooth and bubbly. ![]() Place a third of the cooked macaroni in un-greased casserole dish add a third of the cheese then pour a third of the white sauce over the cheese, repeat two more times. I make this several times a year but it is really good in the colder months. Kind of like hot cocoa in front of a fire or a big hug from your grandma, cozy. I don’t know why but it makes me feel warm and cozy. Do you have that one meal that brings back wonderful childhood memories?
